April, 15 - TARAXACUM OFFICINALIS (DANDELION)

Coming back from the horses race, I found myself in a fields of dandelions...I could not resist!!

I collected a lot of flowers!

1 - TARAXACUM HONEY

Take the dandelions.





Divide the flowers (only the flowers!!).




Wash them.




Put the flowers in a saucepan, add a lemon cut into quarters, cover with water and boil for 10 min.






After 10 minutes, turn off the fire, cover the soucepan and let stand for one night.


The following day, filter the flowres..




 ..and put all the liquid again on the stove.




Now you must added for each cup of the filtrate liquid, two cups of sugar..




..and simmer over low heat until volume is halved, as shown in the following photos.










In the meantime, prepare the jars.



Do the drop test to see if it is ready.




Finally, filling and sealing the jars.




Sometimes, if you cook too mutch the hoeny, is possible that it will crystallize..don't warry, it is still good!

To conclude the working day, I enjoyed with a great RISOTTO WITH TARAXACUM LEAVES, APPLES AND TOMA!!!

  1. Ecco com'è stato creato quel nettare che degusto ogni mattina, mia fonte primaria di sostentamento quotidiano...
    Oggi l'ho fatta assaggiare (pochissimo) anche al Canadese biondo figlioccio della cinese dell'est: era estasiato!
