May, 16 - TIRAMISU', FROM THE EGGS TO THE TRAY


Above rall, this post is for Elena!

First Step
SAVOIARDI

Beat the egg yolks with a bit of sugar...



...add a mix of flour and potatoes flour.
(for 6 eggs, 130g white flour and 60g of potato flour.
as for sugar, the quantity is up to you, to your taste..a good amount is about 200g, 100 for the yolks and 100 for the whites)
Its also good to add a pit of lemon juce.



Whip the egg whites with the some sugar.

Add and mix gently, necessarily with a  woodden spoon, from the botton to the top.

..mix, mix, mix...and talk with your coockies, they need to feel loved!!

This must be the consistency of the cream.

I need a pastry bag!!
I don't have a pastry bag!!
I create a pastry bag!!!!





So, draw the cookies on the baking tin,
and put in the oven,
160 C° for 15-20 min, untill they look ready!!


Remove from the oven and put on a cold surface or on a gridiron..
..and wait until they cool!!
Than, enjoy!!!



In the real recepy you should add some icing sugar on the top of cookies before oven,
but I'm going to use the Savoiardi for the Tiramisù, so it is not necessary!!

Second Step
TIRAMISU'
So, start again..
..separate the yolks from the whites,



Whip, whip, whip, whip...
..the whites..


This time I have an assistant!!!


..and the yolks.


Add the mascarpone to the foamy yolks, and start again to whip till you get a cream.
(500g of mascarpone cheese for 6 eggs..I only had 5 eggs, but is the same!
Sugar as you like!)



Gnammmmmm...sluuurrpppppp...
Where is the panettone!?!?! Ah no, right, is not Christmas!!


You can also add a spirit to the cream, like a Rum or Cognac..or Vodka!

Than, add the whites, an the cream is ready! Remember to use the wooden spoon to mix!


Prepare the pan,


take the cookies,


and start:
soak the savoiardi into the COLD coffee (you must have done it before!).


The soaking must be very fast, is not necessary to completely immerse the savoiardi into the coffee.


Dispose the savoiardi in tha pan and cover with cream!




Repeat for another layer!

At the and, dust the surface with cocoa powder.



Cover and put in the fridge.
Wait untill it gets cold
and than EAT!!!!!!

BIRRAMISU
A tasty alternative is obtained replacing the cofee with a stout beer or with a porter beer...the Birramisù!!!

Very cold porter beers or stout beers are also good to drink eating the Tiramisù.
